Hops n Drops, a well-loved casual burger restaurant known for its friendly vibes and tasty meals, is closing its final location in Colorado. For many regulars, it’s an emotional farewell, as this was more than just a place to eat—it was a neighborhood favorite where memories were made.
A Look at the Chain’s Journey in Colorado
Originally called Hop Jacks, the restaurant chain changed its name to Hops n Drops in 2018. Over the years, it expanded across the Pacific Northwest and into Colorado, where it opened three locations. Sadly, none of them managed to achieve the level of success the company had hoped for.
The last remaining Colorado outlet, located at 820 Stetson Hills Blvd., will be closing its doors at 10 PM this Thursday. This marks the end of Hops n Drops’ journey in the state.
Why Is It Closing?
Kevin Eggen, the CEO of Hops n Drops, explained the reason behind the decision. He said that the restaurants in Colorado simply didn’t attract enough customers. Despite their efforts, sales remained low.
“We really liked Colorado and we want to be here,” Eggen said, “but right now, we need to focus on our core market in Washington and Oregon.”
Fans Share Their Sadness Online
As news of the closing spread, regular customers took to social media to express their sadness. Many shared heartfelt messages and memories.
One fan, Derek Wilson, posted: “I’m so sad about this. Love this place. You’ll be missed.”
Another loyal customer, Brigitte McAdams, wrote: “I love going there… especially the drops. I was there with my friend a few days after they first opened and it became one of my favorite spots. So sad.”
Many customers also mentioned how friendly the staff were and how much they enjoyed the overall experience.
Employees Offered Help
The company made sure to support its staff through the transition. About 30 employees at the Stetson Hills location were offered help to find other jobs or move to different Hops n Drops locations.
Eggen praised the team, saying: “The fact that everyone stayed on with us until the end shows their strong support for the customers and the company.”
Could They Return One Day?
Even though Hops n Drops is leaving Colorado for now, there’s still a small chance it might return in the future.
“Never say never,” Eggen said, though he added that it’s unlikely to happen soon.
For now, the chain will continue to run its 19 restaurants across the Pacific Northwest—16 in Washington and 3 in Oregon.
A Heartfelt Thank You
A notice placed at the Stetson Hills location read:
“Thank you for the support, memories and good times over the years.”
Customers were invited to stop by one last time for a “goodbye burger” and a personal farewell.
The closing of Hops n Drops in Colorado has left a lasting impact on many local customers. Known for its warm atmosphere and delicious food, it was more than just a restaurant—it was a community hangout.
While the chain continues to grow in its home markets, Colorado fans can only hope it will someday return. For now, all that’s left are the memories—and maybe one last visit before the doors close for good.
